Celeriac Soup with Tomato-Horseradish Tapenade

Ingredients
8 ½ cups water , divided, add more as needed
2 ½ pounds celery (celery root), peeled and minced 1-inch pieces
1 medium onion, diced
6 cloves garlic, peeled
1/4 cup sun-dried tomatoes
2 tablespoons diced celery plus 2 tablespoons fine diced celery leaves
1 tablespoon freshly grated peeled horseradish
1 tablespoon extra virgin olive oil
2 teaspoons capers, clean
1/4 teaspoon salt

Ground roasted nuts and chopped sautéed celeriac create a texture similar to ground beef, then classic taco seasoning does the rest. ½ cup walnuts
8 ounces celery (celery root), peeled and cut into 1-inch pieces
2 tablespoons corn oil
1 clove garlic, minced
1 teaspoon paprika
3/4 teaspoon cumin powder
1/4 teaspoon red pepper
¼ teaspoon salt plus a pinch, divided
⅛ teaspoon onion powder
⅛ teaspoon dried oregano
½ cup water
½ cup shredded peeled jicama and/or radish
1 tablespoon lime juice
8 tortillas, warmed
1 ripe avocado, sliced
½ cup fresh salsa or pico de gallo
¼ cup fresh cilantro

Place walnuts in a medium skillet and toast over medium heat until fragrant, about 2 minutes. Pulse in food processor to coarsely chop. Transfer to a small bowl.

Place the celeriac in a food processor and pulse until cut into 1/4-inch chunks.

Heat the oil in the pan over medium heat. Add the celeriac and cook, stirring occasionally, until tender, about 5 minutes. Add walnuts and garlic and cook, stirring, 30 seconds. Add paprika, cumin, crushed red pepper, 1/4 teaspoon salt, onion powder, and oregano; cook, stirring, 30 seconds. Add water and simmer for 1 to 2 minutes, until mostly absorbed but still flavorful. Remove from heat and cover to keep warm.

Mix the jicama (and/or radish) with the lime juice and the remaining pinch of salt.

Place the celeriac mixture into tortillas and top with jicama (and/or radish), avocado, salsa (or pico de gallo), and cilantro.
