This vegetable has everything to please children because of its slightly sweet taste. To make Jerusalem artichoke puree: Peel the tubers and cook them in milk for about 20 minutes. Now mix the tubers, add cream and season to taste. Puree prepared like this provides all the subtle flavor of Jerusalem artichoke.
