Product Description:Overnight drying is a method of preserving fish invented by fishermen in Hokkaido, Japan. The fresh fish is first cut open, the internal organs are removed, soaked in salt water with a concentration similar to sea water, and then air-dried overnight to make the fish meat more fragrant and firmer in texture. Dried overnight is different from ordinary salted fish.
It can be said to be a popular delicacy in izakayas. The golden and slightly burnt fish is full of aroma. Squeeze a few lemon slices on the fish skin, pick up the fish with chopsticks, dip it in pepper and salt, and eat it with a glass of cold beer. A great time to get together with friends.
Semi-dried overnight (いちやぼ, semi-dried) originated from the special catch preservation method of Hokkaido, Japan. Because of the rich fishery, local fishermen wash the fresh catch and remove the internal organs, then soak it in salt water and leave it in the cold wind of Hokkaido. After being air-dried and exposed overnight, the fish itself will become firmer and less likely to produce a fishy smell. Because it is only air-dried for one night, the fishery products made by this drying method are called overnight drying. In addition, after the fish body fat is soaked in salt water and air-dried, the fish fat is not only not greasy, but also adds a salty flavor.
