🛍 Product Information (Main) (English):

Vanilla pods are the seed pods of the orchid plant vanilla. Due to the special flower structure of vanilla, the natural pollination rate is only about 1%, and each flower will only bloom at a specific time on a specific day of the flowering season. If there is no If the pollination is completed within a specific period of the day, the vanilla pods will not be produced. Therefore, a large amount of manpower must be used in a short period of time to complete the artificial pollination of each plant in order to successfully produce pods.

Taiwan has introduced vanilla cultivation for more than ten years, and its processing technology has continued to improve. This year, the Taoyuan Agricultural Reform Farm (hereinafter referred to as "Taoyuan Farm") developed a fermentation machine that can increase the vanillin content of vanilla pods, up to 3.5%, which is higher than Global average, more intense aroma.

The introduction of vanilla planting in Taiwan is also mainly bourbon. The current planting area in Taiwan is about 15 hectares, and the annual output is about 1 metric ton.

Bourbon vanilla, also known as Mexican vanilla, is a semi-sun plant. In Taiwan, it is mostly planted in a sheltered net room. It will be mass-produced after about 4-5 years of planting. It blooms in April-June every year and requires artificial pollination. , and wait for 8 months for the vanilla pods to mature, and start harvesting in February of the following year. The harvested vanilla pods can be used after 5-6 months of killing, fermenting, drying and aging.

The grown vanilla pods are green and odorless, and must be processed through fermentation and drying to have a fragrance. After the green vanilla pods are harvested, they will be boiled in hot water first, then fermented in a pot or box, and dried in the sun during the day. This process will take at least 6 months until the vanilla pods are fully grown. Dry until it becomes a common black dry flat shape. Therefore, the production of vanilla must rely on a lot of manpower and time.

The supply of vanilla beans is unstable. Madagascar, which supplies 85% of the world’s vanilla beans, was partially planted with other economic crops such as palms, which led to a shortage in 2012-2013. The newly planted vanilla beans need at least 2-3 years to grow. As a result of harvesting, the production speed is too late to meet market demand. In 2015, due to the poor harvest, the supply was in short supply, causing the price to rise by nearly 150%. In early 2016, the price of Madagascar vanilla was between US$200-250 per kilogram (approximately HK$1560-$2000), and the market rose again in 2017. To close to US$500 per kilogram (approximately HK$3900).

Vanilla is produced in Madagascar, Tahiti, Mexico, Uganda, India, Indonesia and Papua New Guinea.

🍎 Preserve fruits

1. Fruits especially with softer skin, if packaged, should be placed in the cold box in the original package;
2. Organic fruits are more prone to spoilage if they have water droplets. Put the fruits in a ventilated place to dry or wipe off the water vapor, then wrap the fruits in slightly damp newspaper and put them in a plastic bag before refrigerating. ;
3. Organic fruits do not use preservatives or special treatments. fruits are generally stored for three to five days in room temperature only, should be kept in fridge. Some fruits e.g. papaya will decompose enzymes, so they should be eaten as soon as possible.

🍏 How to wash fruits

1. Wash fruits before eating to keep them fresh;
2. It is not advisable to soak the fruits for too long, and they should be washed first and then cut to avoid the loss of vitamins;
3. Washing fruits with dilute salt water or Dish Drop can easily remove vegetable insects;
4. Cut fruits with a stainless steel knife to reduce vitamin loss;
5. Vegetable leaves contain a lot of nutrients, so you should avoid shredding, chopping or grinding the leaves;
6. Immediately eat after cutting, to avoid the loss of vitamins due to air oxidation.
