靈感來源:大家平常點酒時酒名都會說英文還是中文翻譯呢?像是 Gin Tonic、Whisky Sour 似乎直接講英文也不奇怪,但有一杯經典調酒在點酒時絕對都會說中文,那就是「老廣場」!

老廣場原名叫 Vieux Carré,是不是完全不會念呢?因為這是法文單字,它的發音可以念成像 “voo car-ray” 這個發音。老廣場這杯調酒被發明於 30 年代,是由調酒師 Walter Bergeron 在紐澳良蒙特萊昂酒店(Hotel Monteleone)的酒吧中所創作的。紐澳良是許多雞尾酒的誕生之地,因為與這邊是不同文化的融合之地息息相關,創造出了許多當時新式的事物。

我們就在這個傳統基礎, 賦予新靈感創作,將香港懷舊的大街小巷那一種藥材舖、茶館 的風味作為二次創作,把陳皮、舊普洱、養命酒的風味混合「老廣場」的 調酒配方,成為這隻「陳皮普洱紫禁城」的創意靈感,就讓你來試試吧!


Source of inspiration: When everyone usually orders wine, does the wine name speak in English or is it translated into Chinese? It’s not surprising that restaurants like Gin Tonic and Whiskey Sour speak English directly, but there is one classic cocktail that you will definitely speak in Chinese when ordering, and that’s the “Old Plaza”!

The original name of the old square is Vieux Carré. Can you not pronounce it at all? Since it's a French word, it can be pronounced like "voo car-ray." The Old Plaza cocktail was invented in the 1930s by bartender Walter Bergeron at the bar of the Hotel Monteleone in New Orleans. New Orleans is the birthplace of many cocktails, because it is closely related to the fusion of different cultures, creating many new things at the time.

Based on this traditional basis, we gave new inspiration to our creations, using the flavors of herbal medicine shops and teahouses in the nostalgic streets and alleys of Hong Kong as secondary creations, mixing the flavors of tangerine peel, old Pu'er, and Yomeishu with the flavors of "Old Plaza" The cocktail recipe has become the creative inspiration for this "Orange Peel Pu'er Forbidden City", let you try it!

如果是炎熱的夏天,你想來一個爽快的感覺,就別想太多,為你的酒加冰吧!不過,加冰也有一些學問,千萬別用碎冰,最理想的,是用些體積較大的冰塊較佳,而使用冰球當然更好,因為可以避免融化速度太快,而令我們的酒太快變得太稀,而失去了享用的樂趣!

Highball(ハイボール)即是加冰再加梳打水
自己簡易調製Highball,你只需直接將一份酒加進裝滿冰塊的高身大酒杯之中,然後加進一罐梳打水即可,當然揀選質量較好的梳打水,風味也會更坐,口感也會更柔順!

溫熱
基本上酒都可以溫熱來飲用,芳醇的酒質非常適合加熱,先將水煮沸,水的高度至少要高於盛酒容器的一半。將剛煮沸的水靜置一分鐘,因為用100度的水溫酒易出現酒精臭味。將盛酒容器放入熱水中約三分鐘,並稍微蓋住開口,可保留香氣。當盛酒容器有點燙手的感覺,那就可以飲用了!

Ideally, it is better to use larger ice cubes. It is certainly better to use ice balls, because it can avoid melting too quickly and causing our The wine becomes too watery too quickly and the enjoyment of it is lost!

Highball (ハイボール) is just adding ice and soda water
To make your own Highball easily, you only need to add a portion of wine directly into a tall wine glass filled with ice cubes, and then add a can of soda water. Of course, choose better quality soda water, and the flavor will be better. It will sit longer and taste smoother!

Warm
Basically, wine can be drunk warm. The aromatic and mellow wine is very suitable for heating. Boil the water first, and the height of the water should be at least half higher than the wine container. Let the freshly boiled water stand for a minute, because wine with a water temperature of 100 degrees will easily smell of alcohol. Place the wine container in hot water for about three minutes and cover the opening slightly to preserve the aroma. When the wine container feels a little hot to the touch, it’s time to drink!

What flavors does wine have when heated?
1. Aroma: When it is too cold (below 10 degrees), the aroma will be locked. When the temperature rises, the aroma will begin to spread out. The aroma will be most obvious when it is close to normal temperature (15~20 degrees). If it goes up again, it will be too active and spread out.
2. Acidity: The acidity is obvious at low temperatures. When the temperature rises, it will become more rounded and easier to eat.
3. Sweetness: Not obvious at low temperature, the sweetness gradually increases as the temperature rises
4. Overall taste: All aspects are sharper at low temperature, and become rounder and fuller after heating.

酒加熱後會有哪些風味?
1.香氣:太冰時 (10度以下) 香氣會被鎖住,溫度上升時香氣會開始發散,在接近常溫 (15~20度) 香氣最明顯,再上去就會太活躍而發散出去。
2.酸度:低溫時酸感明顯,溫度上升後會比較圓潤好入口
3.甜味:低溫時不明顯,溫度上升甜味口感也慢慢增加
4.整體口感:低溫時各方面都較銳利,加熱後轉為圓潤並提升飽滿度
