It is an alcoholic beverage that is fermented from fruits. It is the first wine that humans learned to brew. The most common raw material is grapes, which are made into wine. As early as 6,000 years ago, the Sumerians and ancient Egyptians were able to make wine. Others such as plums, apples, blackberries, etc. can also be made into wine.

Most of the monosaccharides in nature exist in various fruits, mainly glucose and fructose. The sugars in fruits can be fermented by microorganisms existing in nature to produce alcohol under suitable temperature and humidity conditions. The production of fruit wine is inseparable from yeast. During alcoholic fermentation, the temperature is generally controlled at 18-25°C. During the natural fermentation of wine, the main effect is the wild-type yeast attached to the grape skin. During the fermentation process, as the alcohol content increases, the pigment of the red grape skin also enters the fermentation liquid, making the wine appear dark red. In anaerobic, acidic fermentation broth, yeast can grow and reproduce, while most other microorganisms are inhibited because they cannot adapt to this environment.

Brewed wine (English: Fermented Alcoholic Beverage) is an alcoholic beverage brewed only by the process of alcoholic fermentation. This alcohol concentration is usually less than 20%, which is lower than that of distilled spirits. Common brewed wines include beer and wine.

About half of the sugar (glucose, fructose, sucrose) contained in fruit juice is fermented by yeast to become ethanol, so it is necessary to add sugar before fermentation or add neutral spirits after fermentation to adjust the alcohol content. For juices that are too sour, it is recommended to add calcium carbonate to deacidify the juice before fermentation.

Schuber uses a separate pure yeast culture adapted to the fruit, rather than the wild yeast that clings to the skin of the fruit. Examples of so-called fruit wine include wine (original fruit: grape), cider (original fruit: apple), and the like. Also, the fruit wine made this way is distilled to increase the alcohol content and is called brandy.

Typically, a blend made by steeping fruit in liquor such as neutral spirits or continuously distilled shochu, especially liqueurs, is sometimes called fruit wine. Examples include plum wine, flower forest wine, and limoncello.

After aging, the color of fruit wine is red, white and pink. Best served chilled or at room temperature.

如果是炎熱的夏天,你想來一個爽快的感覺,就別想太多,為你的酒加冰吧!不過,加冰也有一些學問,千萬別用碎冰,最理想的,是用些體積較大的冰塊較佳,而使用冰球當然更好,因為可以避免融化速度太快,而令我們的酒太快變得太稀,而失去了享用的樂趣!

Highball(ハイボール)即是加冰再加梳打水
自己簡易調製Highball,你只需直接將一份酒加進裝滿冰塊的高身大酒杯之中,然後加進一罐梳打水即可,當然揀選質量較好的梳打水,風味也會更坐,口感也會更柔順!

溫熱
基本上酒都可以溫熱來飲用,芳醇的酒質非常適合加熱,先將水煮沸,水的高度至少要高於盛酒容器的一半。將剛煮沸的水靜置一分鐘,因為用100度的水溫酒易出現酒精臭味。將盛酒容器放入熱水中約三分鐘,並稍微蓋住開口,可保留香氣。當盛酒容器有點燙手的感覺,那就可以飲用了!

Highball (ハイボール) is just adding ice and soda water
To make your own Highball easily, you only need to add a portion of wine directly into a tall wine glass filled with ice cubes, and then add a can of soda water. Of course, choose better quality soda water, and the flavor will be better. It will sit longer and taste smoother!

Warm
Basically, wine can be drunk warm. The aromatic and mellow wine is very suitable for heating. Boil the water first, and the height of the water should be at least half higher than the wine container. Let the freshly boiled water stand for a minute, because wine with a water temperature of 100 degrees will easily smell of alcohol. Place the wine container in hot water for about three minutes and cover the opening slightly to preserve the aroma. When the wine container feels a little hot to the touch, it’s time to drink!

What flavors does wine have when heated?
1. Aroma: When it is too cold (below 10 degrees), the aroma will be locked. When the temperature rises, the aroma will begin to spread out. The aroma will be most obvious when it is close to normal temperature (15~20 degrees). If it goes up again, it will be too active and spread out.
2. Acidity: The acidity is obvious at low temperatures. When the temperature rises, it will become more rounded and easier to eat.
3. Sweetness: Not obvious at low temperature, the sweetness gradually increases as the temperature rises
4. Overall taste: All aspects are sharper at low temperature, and become rounder and fuller after heating.
