Pak Choi Chicken Broth

Ingredients

  • 2-1/2 pounds bony
  • chicken pieces
  • 300g of Pak Choi or Baby Pak Choi
  • 2 medium onions, quartered
  • 2 bay leaves
  • 1/2 teaspoon dried rosemary, crushed
  • 1/2 teaspoon dried thyme
  • 8 to 10 whole peppercorns
  • 2 quarts cold water

Instructions

  1. Place all ingredients, except the pak choi, in a soup kettle or Dutch oven.
  2. Slowly bring to a boil; reduce heat. Skim foam.
  3. Cover and simmer for 2 hours.
  4. Add Pak Choi and bring to boil, season to taste and serve.
