Noah's Forest

Cultivating Healthier Soil and Food for Vienna and Her Family at Noah’s Forest

Vienna was in the catering business for over 10 years, but upon having children she left her job and is now a freelance food stylist and farmer at Noah’s Forest. Facing some personal health issues, Vienna began looking into where her food was coming from and found a lack of transparency within the food system - and this is where her passion derived from. Based on her own experiences, she found it difficult to buy organic produce in HK and as a result, she started farming in her backyard and focused on ways to provide clean and safe food for her family.

Vienna attended many classes and began to understand the various different farming styles. She discovered that farmers would normally remove trees to allow more sunlight onto their farms and crops, but her learnings taught her that keeping the soil covered and protected was better. The trees at Noah’s Forest have been there for decades and were naturally grown with no chemicals so she was determined to keep those longan trees on the farm to allow them to become part of her regenerative mission. She now also gathers all of the fallen leaves and dries them for mulch as she knows they perform not only as soil protection, but as a great food source for critters above and below ground. By making good use of all resources at hand, her farm demonstrates what it would look like to participate in a circular food system.When you are going beyond best practices, why not put this goodness back into the soil!

Vienna believes she has a very special farm under the longan trees’ shade. She makes it work by focusing on soil and tree management, composting, perennial crops, no tilling and mulching. She aims to produce healthy food whilst also contributing as part of the solution in tackling climate change.
