Eggplant Parmigiano

Ingredients

  • Eggplant 120g
  • 3-4 medium tomato, sliced
  • Handful of basil
  • A handful of mozzarella cheese
  • 1 cup of pomodoro (tomato sauce) sauce
Instructions

  1. Slice eggplant, dap with bread crumbs and four and pan fry.
  2. Layer eggplant with mozzarella cheese, basil and tomato.
  3. Topped with Pomodoro sauce and mozzarella cheese.
  4. Bake at 180˚C for 45 minutes and serve.
