Banana Bread

Ingredients

  • 175 g all-purpose flour
  • or cake flour
  • Pinch of baking powder
  • Pinch of baking soda
  • Pinch of kosher salt
  • 260 g bananas, pureed
  • 2 g lemon juice
  • 175 g granulated sugar
  • 46 g eggs
  • 57 g veg oil
  • 30 g chopped walnuts, toasted
  • 27 g chocolate chips

Instructions

1. Weigh the flour, baking powder, baking soda, and salt and set them aside.
2. Place the bananas, lemon juice, and sugar in the bowl of an electric mixer using the paddle attachment, or beat by hand with a whisk.
3. Add the dry ingredients all at once and mix until thoroughly incorporated.
4. Add the nuts and chocolate chips at the end and mix.
5. You can either bake this recipe in a loaf pan, or you can make muffins with it.
6. Bake in a 350°F oven or 165°C oven until the bread bounces back to the touch or a toothpick inserted comes out clean. Around 25 minutes depending on the oven.
7. Allow cooling before serving.
